Pumpkin Porridge for Diabetics

What You Need
- Pumpkin 1 kg
- Milk 1 glass
- Sugar substitute - in terms of 2 tablespoons of regular sugar
- Couscous – according to taste. If you like thick porridge, use 1 glass. If you like it runnier, use half a glass.
- Nuts and favorite dried fruits – no more than 10 gram per serving, which we add right before serving
- Cinnamon
How to make
Slice the pumpkin very finely, place it in the pot with water and let it cook. When it’s almost done, string the water. Add the couscous, milk, and sugar substitute. Cook the porridge until it’s done. The dish is almost ready to eat. Sprinkle with nuts and dried fruit before the serving. Add the cinnamon on top. You can add as much of it as you like. Remember, it does wonders with lowering the sugar.
I want to mention about the texture of pumpkin. I like it when there are small pieces of it in the porridge. If you like it more even, you can chop it in the blender before adding the couscous and milk.
